I've made whole wheat pancakes with a recipe I found online in the past and they were not good. My kids wouldn't eat them. Then I found this recipe, was a little skeptical at first but looked at all the positive comments, so I decided to give this recipe a shot. I was not at all disappointed, just the opposite!

The pancakes were fluffy and soft, not like my other rock hard ones. I added vanilla extract, cinnamon, bananas, and frozen blueberries. I cooked with Earth's Balance new product- coconut butter. They were amazing, not a single pancake left! My two year old son ate three pancakes (its hard to get him to eat unless it's good!). I will definitely be writing this recipe down to make again! Thanks a lot for sharing this wonderful wholesome pancake recipe!

To cut out sugar while maintaining sweetness: Replaced milk w/unsweetened applesauce, consequently sweetening the batter while maintaining calories of 1% milk (no calories from protein in applesauce).

Tip on cooking: Seems important to whip batter each time before pouring--batter settles between batches?

Great, no fuss recipe! Used vanilla almondmilk instead of regular milk, came out just as good.I also replaced maple syrup with Raw Blue Agave Nectar. Low glycemic and delish ;-)

Great recipe! I used some of the modifications from other commenters- added yogurt, cinnamon, vanilla and oatmeal, substituted brown sugar for granulated white sugar and organic, grass-fed butter for oil. I also added an egg to the doubled recipe. Topped with blueberries and real maple syrup! Amazingly delicious and filling! In the future I'll try adding other protein-boosting ingredients. I made more than we needed this time and I will freeze the left-overs for snacks for my toddler, he loved them as well!

Fantastic recipe! Based on the comments, I used applesauce for the oil, 1/2 regular splenda and 1/2 brown sugar splenda for the sugar, and added vanilla extract and a 1/2 tsp baking soda. My entire family loved it - will definitely make again!

A savoury version: omitted the sugar & oil, added shaved ham & roast beef. Made the pancake as big as my non stick pan could hold and flipped them into half. Delish! Will try with cabbage (like a Japanese Okonomiyaki and bacon) or plain julienned spring onions.

Add about a cup of organic blueberries in with this recipe and use real maple syrup. Not the fake plastic tasting syrup. This is seriously the best breakfast ever.

I love it - simple and healthier. These pancakes would be a great breakfast before a race - just don't overeat. Thanks to all the other commenters who made suggestions for additional items such as walnuts, bananas, apple and cinnamon.
