Honey Roasted Chicken July 17th, 2007

4 boneless, skinless chicken breasts
1 cup honey
1/2 cup teriyaki sauce
1/4 cup orange juice
1 tbsp spicy or Dijon mustard

Preheat oven to 375 degrees F. Place chicken breasts in a shallow baking pan.

Combine all other ingredients in a bowl. Mix well and pour over chicken.

Bake uncovered 45 minutes or until chicken is done, basting chicken periodically.

Editor’s Note:

I like to keep frozen orange juice on hand. Scoop a little out and mix with an appropriate amount of water, melting the frozen juice in the microwave if necessary.

I also like to cut the chicken breasts into 3 or so pieces each. It gives more surface area that is in direct contact with the honey mixture.
