Carrot and Thyme Bread February 12th, 2007

2 1/2 teaspoons Active dry yeast
2 1/4 cups Bread flour
1 cup Rye flour
1/2 cup Yellow cornmeal
1 1/2 tablespoons Sugar
1 1/2 teaspoons Salt
1 1/2 tablespoons Dried thyme
2 cups Carrots; freshly grated or finely chopped
1 cup Water or more if needed

Add all ingredients in the order suggested by your bread machine manual and process on the basic bread cycle according to the manufacturer’s directions. Let the loaf cool before slicing.

This bread has lots of vitamins and is really great with fruit, salad or bean soup. Recipe makes a 1-1/2 pound loaf.
