Make Healthy Meals

 
 
   
Baked Barley July 26th, 2007

2 tbsp olive oil
1 medium onion, diced
1 cup uncooked pearl barley
1/2 cup pine nuts
1/2 cup sliced fresh mushrooms
1/2 cup chopped fresh parsley
1/4 teaspoon salt
1/8 teaspoon pepper
2 (14.5 ounce) cans vegetable broth

Preheat oven to 350 degrees F.

Put oil in a frying pan and add barley, onions and pine nuts. Cook over medium-high heat until barley is lightly browned. Add mushrooms, parsley, salt and pepper.

Place mixture in a 2 quart casserole dish. Add broth and bake in oven for 75 minutes or until water is absorbed.

Editor’s Note:

I think of this as a great base recipe. Non-vegetarians can use chicken or beef broth or add meat. I like to add a variety of vegetables, not necessarily mushrooms, and play with the seasonings. Some find the basic recipe a little bland, and spicing it up to your taste can make a big difference.
