This combination actually works quite nicely. Prunes are naturally sweet which means you need less sugar. You also dont need to add any butter or oil to the mixture.

10 large, ready to eat prunes (stones removed)
3 ounces plain white flour
3 ounces plain whole wheat flour
2 teaspoons baking powder
2 ounces brown sugar
1 free-range organic egg, lightly beaten
5 ounces skim milk
3 ounces of fresh blueberries

Preheat oven to 325F. Make a prune puree by placing the prunes and a little water in a food processor and blending until smooth.

In a large bow, mix the flours, sugar and baking powder. In a separate bowl mix the prune puree, milk and eggs. Add this mixture to the flour mixture and gently mix. Take care not to over mix.

Gently fold in the blueberries and divide the mixture between the muffin tins. Fill tins 2/3 full. Bake for approximately 20. Youll know the muffins are done when you stick a small knife or toothpick into the center and it comes out clean.

1-1/2 teaspoon salt
1/2 cup honey
2 cups bread flour
2-1/4 cups whole wheat flour
1 (.25 ounce) packages active dry yeast
1 tablespoon butter, melted

Add ingredients to bread machine in the order suggested, with the exception of the last tablespoon of melted butter. Turn on dough setting, allow to mix and rise.

Remove bread from machine. Grease any bread pans being used. Separate into loaves, rolls or whatever shapes you like. Allow to rise a second time until doubled or until dough tops bread pans by 1 inch.

Bake at 350 degrees F for 25-30 minutes. Lightly brush tops with remaining melted butter to keep the crusts from getting hard.

Editor’s Note:

I love this recipe! I adapted it so that I could just throw the ingredients in my bread machine – the original was completely hand mixed. I love having my machine handle the mixing, but I don’t like the tall loaf it creates, so I prefer to bake my loaves in bread pans, as rolls, etc., depending on my needs at the time.

The usual Easter egg bread is made with an egg bread, but this year I was a little low on eggs after boiling and dying most of mine, and no time to go to the store for more.

I knew I wanted 5 eggs to cook in my bread, just for how it looks, and that was what I had left. With that in mind, I decided to cook a cinnamon bread and put the eggs in it.

I think it looks rather nice. I’m debating adding a glaze or frosting to it – probably a nice frosting like you would put on a cinnamon roll.

Anyhow, here’s the recipe:

1 1/4 cups warm water (110 degrees F/45 degrees C)
2 tablespoons margarine, softened
3 1/4 cups bread flour
1/4 cup white sugar
1 1/2 teaspoons salt
2 teaspoons ground cinnamon
2 1/2 teaspoons active dry yeast
3/4 cup raisins
5 raw, dyed eggs

Put all ingredients except the raisins and eggs into the breadmaker in the order recommended by the manufacturer and start the dough cycle. Add raisins as the dough mixes.

Allow dough to rise for the entire dough cycle. Remove from machine and separate into two balls onto a lightly floured surface. Allow to rest 10 minutes.

Roll each ball into a rope about 2-3 feet long. They should each be about the same length. Braid loosely and make into a circle, joining the ends as best you can. Place on the tray you will be cooking on.
Slide the eggs between the braids. Allow dough to rise about 45 minutes.

Preheat oven to 350 degrees. Bake bread for 45-55 minutes.
