Maui Meatballs September 14th, 2007

1 lb lean ground beef
1/2 cup rolled oats or bread crumbs
1/3 cup chopped onion
1 egg, beaten
1/4 tsp ground ginger
ground black pepper and salt to taste
2 tablespoons corn starch
1/2 brown sugar, packed
1 can pineapple chunks
1/3 cup vinegar
1 tablespoon soy sauce
1 bell pepper, chopped

Preheat oven to 350 degrees F. Mix ground beef, oats, onion, egg, ginger, black pepper and salt. Roll into meatballs. Bake for 15-20 minutes on a rack, or until meatballs are done.

While meatballs are baking, combine corn starch and brown sugar in saucepan. Add juice from pineapple chunks, reserving the chunks. Add vinegar and soy sauce. Stir frequently over medium heat until thick. Add pineapple and bell pepper.

Editor’s Note:

These are great served over rice or noodles. The taste is fairly sweet. You can water down the sauce if it comes out too thick, but I have rarely found that to be necessary.

Kabob Marinade May 17th, 2007

1/2 cup olive oil
3/4 cup soy sauce
1/2 cup lemon juice
1/4 cup Worcestershire sauce
1/4 cup mustard
1-1/2 tsp black pepper
2 cloves minced garlic

Chop preferred meat into sizes appropriate for kebobs. Mix all ingredients together in a resealable plastic bag and add meat. Marinate for 4 or more hours, up to overnight.

This marinade is really wonderful on beef. Like any marinade, half the fun is playing with the ingredient list and seeing what you can come up with. As summer approaches, barbequeing will be more fun and a great way to keep your home cooler.

Lasagna April 20th, 2007

1 lb ground beef
1 cup chopped onion (one large)
2 cloves garlic, minced
2 71/2 oz can tomatoes, cut up
2 8 oz can tomato sauce
2 6 oz con tomato paste
2 tsp dried basil, crushed
1 tsp dried oregano, crushed
1/2 tsp dried thyme
1/4 tsp dried rosemary
1/4 cup red wine (optional)
6 dried lasagna noodles
1 beaten egg
2 cups cottage cheese
1/4 cup grated parmesan
3 tbsp snipped fresh parsley (optional)

Crockpot Pepper Steak April 15th, 2007

1-1/2 to 2 lbs round steak cut into strips
2 tbsp olive oil
1/4 cup soy sauce
1 onion, chopped
1 clove minced garlic
1 tsp sugar
1/4 tsp ginger
salt and pepper to taste
1 can chopped tomatoes
2 bell peppers, cut into strips

Beef with Broccoli November 6th, 2006

1 cup beef broth (or one can)
2 tbs sugar or honey
2 tbs soy sauce (low sodium is a good idea)
1 pound beef, chopped into chunks
1/4 tsp chopped fresh ginger root
1 clove minced garlic
2-3 tbs flour
4 cups chopped broccoli

Lightly brown the beef in a skillet. Combine broth, sugar and soy sauce in a bowl. Place mixture and beef into slow cooker. Mix in ginger and garlic. Cook on low for 7-8 hours or high for 3 hours.

About 30-60 minutes before cooking is done mix flour into a little water, then add to liquid in slow cooker. Add broccoli and allow to finish cooking.

Side note: Carrots, snow peas, zucchini, etc are also excellent in this recipe.
