If you have always had negative associations with broccoli as a kid, but you are looking for a way to eat healthier as an adult, its time to dust off those old prejudices and give this leafy green another try! This cruciferous green is considered a must-have on the dinner table, and with just a little bit of research and a few facts, you will understand why. Similarly, you’ll find that a little bit of work will show you exactly how tasty this healthy vegetable can be!

The first thing that you should be aware of is that broccoli is a real powerhouse when it comes to vitamins. Not only does it include a large dose of vitamin C and vitamin A, it also has a healthy heaping of calcium, fiber, and folic acid. You’ll also find that it is an important source of calcium, which can help you build strong bones, control high blood pressure and contribute to the fight against colon cancer. You’ll also find that broccoli is instrumental when it comes to a reduced risk for serious conditions including heart disease, cancers and even cataracts.

So now that you understand how healthy it is, how can you eat it? Many people make an automatic face when it comes to this vegetable, but with some serious taste tests and considerations, you’ll realize that that’s just a left-over artifact from your childhood. While this vegetable is quite tasty when it has been steamed on its own, you’ll find that there are many ways to incorporate it into a healthy diet. To get your best results, steam your broccoli until it is tender but still quite green; this gives you both a lovely looking food as well as a bit of crunch.

One of the most famously tasty ways to eat broccoli is to steam it, and then drizzle some melted cheese over it. Children tend to love this treat, but you’ll find that as an adult, you’ll be able to appreciate the gentle crunch of the broccoli as well as the kind of cheese that you put on top. Sharp cheddar is a traditional favorite, but you’ll also have some great results with pepper jack, and, if you have a taste for it, bleu cheese.

Almost any dish that has a stew or rich, meaty texture can benefit from broccoli. You’ll find that chicken pot pie is a great way to get some vegetables in you, so take some time and the next time you toss in some potatoes, carrots, and rice, throw in some baby broccoli florets as well. The creamy taste of the stew does wonders for the smooth taste of broccoli.

As you can see, there’s no reason to fear broccoli, so take some time and add some of this versatile veggie to your diet!

Did you know that the tomato is really not a vegetable but it is considered to be a fruit instead! Growing from the west coast of South America, the tomato developed. The tomato plant eventually made it’s way to England in the 1590′s. At first the main cultivator was fearful that the plant may be poisonous. Later they found out that the leaves contain the poisonous glycoalkaloids. However, obviously the fruit of the plant is perfectly safe for consumption.

Mainly growing in Central, South and southern North America. Then they also grow in the dry land of Mexico. Then there is Peru as well. Actually it is known that the tomato actually grows wild in Peru.

There are old myths about the tomato. In the 16th century it was thought that if you were to consume the tomato seeds they were actually blessed with powers of divination. Meaning that they possessed divine powers. This was a myth that the Pueblo people believed.

Tomatoes were first were known in British North America in 1710. Then they were discovered in England in 1590. They ended up moving more toward Carolina and in other areas in the southern United States. The tomato was always pretty popular in France and in Italy. It is used in both these countries very much in the cuisine. It is known that there are over 125 tons of tomatoes that were produced in the entire world back in the year of 2005.

The country that came in first for production was not France or Italy, but China. Then there was the United States and then Turkey follows. Tomatoes are very popular whether you want to cling to them as a vegetable or accept them as a fruit.

Some of the most popular dishes that are made with tomato are pastas. Pasta sauces are made of tomato and used in most all Italian cuisine. You can also find them in many Mexican foods as well. There are several ways to eat them and not only as a sauce but you can fry them, pickle them, and you may even eat them in a salad.

The many types of tomatoes include Roma tomatoes, which is an oval shape tomato with a slight sweet taste to it. There are cherry tomatoes that are small and round. You usually find those in the salad bar at your local buffet. They come in all shapes and sizes, but still all taste delicious. Even with just a pinch of salt.

Though they are often thought of as a vegetable and are often cooked with other vegetables, peas are actually fruit, though they have only a mildly sweet taste. Whether you like them boiled or steamed, you’ll find that there are many different kinds of peas available, and they can all be eaten raw, picked right off of the plant. In fact, many people find that they can get a great deal of enjoyment out of eating peas that are crisp and new, only pausing to dip them into a saucer of salt.

You’ll also find that fresh peas can be easily boiled and flavored with mint or with butter, making a great side dish that can be served alongside chicken or beef or pork. You’ll also see that salt and pepper is commonly sprinkled to taste on top, and that there are many different herbs that you can add to bring out the flavorful nature of the peas themselves. Think about adding some rosemary or some marjoram the next time that you boil up some peas and see what kind of subtleties that you can bring out.

Peas are popular all over the world. You’ll find them in India, being used in delicious curries like the alu matar, or in paneer cheese. They can also be used in India as a after-dinner snack, something to sweeten the breath and to leave a good taste in your mouth. You’ll also notice that they are often eaten on their own as well as being made into a soup. In several Asian countries, they are roasted and then salted. In China, the leaves are used as well as the peas themselves. In Europe, yellow split peas are dried and then used to make pease pudding. You’ll find that across the Atlantic, the United States has a similar dish called split pea soup.

If you are looking for a crisp summertime snack, consider making up minted peas. Start with about ten sprigs of fresh mint, where the leaves have been removed from the stem and cut off. Put two inches of water into a saucepan and add the nude mint stalks, simmering for about five minutes before you remove them. Then add the peas to the water and cook thoroughly. If you are using fresh peas, this will take about eight minutes. After you drain the peas, stir in the mint leaves and a tablespoon of margarine, before salting and eating.

Peas, despite their small size, sure pack a lot when it comes to taste, so take some time and really consider how you can add these vegetables to your dinner!

New carrots are a great vegetable to add to your dietary regimen, and you will find that by eating new carrots, you’ll have a wonderful texture that can be crunchy and crisp without being tough!

If you shop often from top of the line groceries and even if you don’t, you might find that carrots are being bred in a variety of different colors. Many people who are turned away from the bright orange shade of carrots will find themselves drawn to carrots of a different hue. Carrots can now occur in yellow, bright red, darker orange, and even purple. What is interesting to note, however, is that with these new pigments come new benefits. For instance, yellow carrots have a larger dose of xantophylls, to which many people attribute good eye health, while purple carrots contain strong antioxidants.

When you are eating carrots, no matter what the color, you are getting a healthy dose of vitamin C and vitamin A. Both of these vitamins can prevent illness as well as help you stay healthy, especially if it comes to the eyes and the skin. Carrots are also an excellent source of folic acid, a substance that is essential for nursing mothers as well as being beneficial for adults as well as children. You’ll also find that carrots are an important part of fighting cancer, strokes and lowering the blood pressure.

When you are looking to cook with carrots, there are a variety of ways to do so. If you like a little bit of crunch in your salads, take some time and shred some up or dice small pieces to throw into a bed of greens. If you prefer softer textures, bake or boil them and then spread on the dressing of your choice. You’ll find you can also take a number of baby carrots, toss them with garlic powders, salt and pepper, cover with olive oil and then bake at 400 degrees for about thirty minutes. This makes an excellent treat that is both good for you and low in calories.

Introducing carrots to your diet might be one of the best things that you can do, especially during the winter months when other vegetables are out of season. See how you can add these colorful veggies to your diet and see what kind of results you get!

May is National Asparagus Month, and if you haven’t yet had the pleasure of enjoying this highly delicious vegetable, this is a great excuse to start!
We’ve all heard that when we are children that if we eat enough carrots that we’ll be able to see in the dark. While the vitamin A that is found in carrots is quite healthy for you, you won’t be able to see in the dark, but you’ll find that with just little bit of research and work, you’ll be able to make carrots a regular and tasty part of your cooking or diet. There’s a good reason that we’re told to eat carrots, but you’ll find that not only are the great for you, they are also delicious in the right circumstances.

Of course, the simplest way to eat carrots is raw. If you have a love for crisp crunchy food, you’ll find that carrot sticks and ranch dressing or some other sort of dipping sauce will be ideal for a midday snack. Take some time to make sure that the carrots you get are not dried out. If they are, you can peel them to make them last a little longer, or you can add some lemon juice to make them a little bit more palatable. Baby carrots in particular are wonderfully sweet, and are a perfect snack when you are too rushed to prepare something else, but still don’t want to raid a vending machine.

You’ll also find that carrots will make an excellent side dish to hearty meat recipes that need some vegetables in them as well. Baked carrots are very simple, and quite delicious. You’ll find that four cups of sliced carrots can be mixed with a half cup of water, butter, sugar, nutmeg and salt, and then baked for 10 minutes at 350F, stirring in the middle. You’ll find that the nutmeg complements the carrots’ natural sweetness as well as bringing out

If you are thinking about finding a way to add carrots to your meals, one thing that you can think about is adding them to your baking. A good carrot cake is a great way to get the vitamin A from carrots into you and your family, but there are other ways as well. Think about your recipes for low fat muffins, whether they are banana nut or raisin muffins, and think about adding grated carrots to them. You’ll get the natural sweetness from the carrot juice as well as a little bit of extra texture on top of it.

There are many ways to integrate carrots into your diet, so take some time and see what you can do with these delicious root vegetables.

Whether you have a love of salads and are looking for something extra crispy or you are interested in learning how to make the stuffed peppers that are so popular in Mexico, you’ll find that there is a lot to learn when you want to think of adding bell peppers to your diet. You’ll find that bell peppers are an excellent source of antioxidants, and depending on what color you get, you’ll also be able to enjoy bell peppers that are faintly bitter and spicy, or enjoy ones that are fully ripe and quite sweet.

At the supermarket, you will often find red, green and yellow peppers, but if you keep an eye out or shop in specialty stores, you’ll also see that white, brown, blue and purple varieties are also common. The color will depend on the ripeness, with green peppers being the color of under-ripeness, and you’ll find that the other colors will have varying degrees of sweetness involved on them. You’ll find that the more vibrant the color, the sweeter the taste is. These peppers are quite hardy; they started in central America, but at the end of the fifteenth century, they were brought to Spain and then spread out across Asia and Europe.

When you are looking to include more bell peppers in your diet, you will soon see that there are many ways to do this. If you purchase red or yellow bell peppers, you’ll find that they are quite easy to eat raw, and that you can do so easily; you can eat them on their own, or you can add a little bit of salt or pepper or ranch dressing. You’ll also soon see that you have plenty of options when it comes to cooking them.

One wonderfully easy and fun thing to do is to make bruschetta. All you need to do is dice up a yellow bell pepper, two large tomatoes and a large onion.
Sweet potatoes are native to Central America and considered one of the oldest vegetables in history. When analyzing Peruvian caves dating back 10,000 years, it is shown that sweet potatoes fed the inhabitants of the past since prehistoric times. Throughout the years, the sweet potato has become an important ingredient in many Asian and Latin American dishes. The southern part of the United States has also embraced the vegetable, which is known to create a well-known delicious holiday pie.

Buying Sweet Potatoes

When purchasing sweet potatoes at the store, you should choose specimens that are firm, free of cracks, and without any soft spots or bruises. If you pass by sweet potatoes showcased in the refrigerated section of a produce department, avoid purchasing them because cold temperatures seem to alter their taste for the worst.

After bringing home a bag of sweet potatoes, store them in a cool, dark and well-ventilated place within your home. The potatoes typically keep fresh for ten days. Storage should be loose and not kept in a plastic bag. Exposure to light and high temperatures will also cause the sweet potatoes to ferment. As a rule of thumb, uncooked sweet potatoes should not be kept in the refrigerator.

Eating the Sweet Potato

Sweet potatoes are rich in vitamin A and also provide a decent source of vitamin C, dietary fiber, vitamin B6, potassium, and iron. With all of these healthy components, the sweet potato is associated with fighting cancer; combating the aging process; and helping dieters lose weight. As you encounter the preparation of the sweet potato, you will find that the entire tuber, flesh, and skin are edible (when purchased as an organically grown product).

Peeling is the common method of preparation for sweet potatoes. Cooking the sweet potato immediately after peeling is suggested, as the longer you wait the more nutrients are lost through the oxidation process.

Cooking Ideas

When serving sweet potatoes, there are numerous approaches to consider. For a tasty treat, you may want to create a puree containing bananas, cinnamon, and maple syrup, which are then topped with chopped walnuts. Some people steam cubed sweet potatoes with broccoli, adding raisins and serving hot or cold with curried vinaigrette dressing. Sweet potatoes also make great desserts, including a wealth of muffin, pudding, bread, and pie recipes.
