One of the hardest times to serve your family healthy food is when you get too tired to cook. It happens to all of us for a variety of reasons. These are times you have to plan for. If you do extra when you have the energy, you’ll have less to worry about when you’re tired. Make your own frozen dinners, for example. Many meals do well in the freezer, and making a double batch is not much harder than making one. Doing this can save the temptation to order pizza or run out for fast food when you’re not in the mood to cook. Chopping vegetables in advance can be a big help too. They make great snacks, can be thrown into salads, stir fried or used in quick recipes if you can get yourself to cook. Are you the only person in your household who can cook? Get someone else to do it! And, of course, if you know you’re going to have a tiring day, the crockpot is your friend!
