1 can black beans Combine all ingredients in a saucepan. Bring to a boil then reduce heat to medium-low. Simmer for 5 minutes and serve. It’s easy to fool yourself about these things. A little unhealthy snack here, a quick trip to a fast food joint there… you could be doing these things more than you realize. A good way to figure out if you are really eating as healthy as you think is to keep a food log. Eat as you usually do, then take a look back at the end of the week, or even a month. See what you’re really eating. With that in mind you can try to figure out when you have the most trouble sticking to healthy habits. Maybe it’s a particular time of day. Maybe it’s when you need lunch for work. You can also try changing your shopping habits if you mostly eat less healthy foods at home. Teach yourself to not buy the foods that give you trouble. Summer is a great time to take advantage of your barbeque. But when you want to eat a little healthier, hamburgers, hot dogs and ribs just aren’t going to cut it as barbeque fare. It’s a good thing that fish can cook quite well on the barbeque too. One of the most important things you need to do before grilling fish is to thaw it out if it has been frozen. Frozen or partially frozen fish doesn’t grill very well. It dries out excessively due to the added cooking time. When choosing fish for your barbeque, select thicker steaks. Nope, don’t know why, but my favorite bread recipe today just isn’t cooperating. What I got from it is currently in the oven, baking, but I am not feeling terribly encouraged about the quality of today’s bake. What’s wrong with it? It just wasn’t rising. Maybe the water was too hot and killed a lot of the yeast or something. I did notice that when I took the bread out of the bread maker so that I could shape it into smaller loaves that it didn’t appear to have mixed well somehow and that the dough was unusually warm. It had risen about half the usual amount. It rose some more when I took it out, but again not as far as it should have. The recipe calls for having the dough rise twice, so I know what it should have looked like. Guess I’ll know soon enough if it’s edible or bird food. |

1 raw jicama, peeled and sliced Combine ingredients in a bowl and mix. Editor’s Note: This recipe is really refreshing for the summer. You can chill it for a while in the refrigerator to allow the flavors to mix a bit if you like. |
